What is the main difference between the 12" and 16" ovens for a first-time buyer?
The primary difference is capacity and features. The 12" oven is lighter, more portable, and perfect for smaller groups or travel. The 16" oven is designed for larger gatherings, heats up slightly faster to higher temperatures, and includes advanced features like a viewing window and adjustable airflow for greater cooking control. What kind of wood pellets should I use in my Big Horn Outdoors® oven?
For the best results and flavor, we recommend using 100% hardwood food-grade pellets. Woods like oak, hickory, or maple provide excellent heat and a classic smoky flavor. Avoid pellets intended for home heating, as they may contain softwoods or additives that are not safe for cooking.
How do I get the classic leopard-spotted crust on my pizza?
That "leopard spotting" or "char" comes from high heat. The key is to ensure your pizza stone is fully preheated to at least 750°F (400°C). Use a dough with a proper hydration level (around 60-65%) and launch the pizza onto the hot stone. The intense heat will cause the crust to puff up and char in spots within 60-90 seconds.
Is the pizza oven difficult to clean?
No, it's designed for easy maintenance. The high temperatures inside the oven incinerate most food residue, a process known as pyrolysis. For the pizza stone, you simply brush off any debris after it cools. The stainless steel exterior can be wiped clean. The most important step is emptying the ash from the firebox once it's completely cold.
Can I use the oven in windy or cold weather?
Yes, you can. The insulated stainless steel body helps retain heat effectively. In very cold or windy conditions, the oven may take a few extra minutes to preheat and might consume slightly more pellets to maintain its temperature. For best results, position the back of the oven against the wind to protect the flame.
