Mashed Potato, Bacon & Truffle Pizza

Ingredients


● 1 store-bought pizza dough (10–12 oz)
● 3–4 potatoes
● Garlic salt, to taste
● Black pepper, to taste
● 2 tbsp butter
● Heavy cream (enough to make the potatoes smooth)
● 6–7 slices bacon
● Fresh mozzarella, torn into pieces
● Truffle oil, for finishing


Mashed Potatoes


1. Peel and boil the potatoes until fork-tender.
2. Drain and mash.
3. Add garlic salt, black pepper, butter, and a splash of heavy cream.
4. Mix until smooth and creamy.
5. Let the mashed potatoes cool before using on the pizza

Bacon


1. Cook 6–7 slices of bacon until lightly cooked but not fully crispy.
2. The bacon will finish cooking in the pizza oven.
3. Chop into small bacon bits.
Pizza Assembly
1. Preheat your oven or pizza oven to 500°F.
2. Stretch the dough to your desired shape.
3. Par-bake the dough for 3–4 minutes before adding toppings.
4. Remove the crust and top with:
○ Mashed potatoes
○ Bacon bits
○ Fresh mozzarella

Bake


1. Return the pizza to the 500°F oven.
2. Bake for 4–5 minutes, or until the crust is golden, the cheese is melted, and the
bacon is crisp.

Finish


● Drizzle with truffle oil immediately after baking.
● Slice and serve hot.

Chef’s Tip: Letting the mashed potatoes cool before topping the pizza keeps the crust from getting soggy and helps the pizza cook evenly.
