Temperature control on a gas grill comes down to one idea: decide where the heat is, not just how high it is. By leaving some burners on and others off, you create zones — a hot area for searing and a cooler area for gentle cooking — and every technique that follows, from reverse-searing a steak to roasting indirect, is built on that pattern. This guide explains how gas grills distribute heat, how to set up two- and three-zone patterns on any burner count, and how to read the lid thermometer without being fooled by it.
How a gas grill heats
A gas grill heats with burner flames under metal heat diffusers or flavorizer bars, which spread the heat across the cooking grate. The result is that the area directly over an active burner is hot, while the area over an off burner stays cooler — but the two zones are not sealed off from each other. Heat radiates sideways, air circulates under the closed lid, and the whole chamber drifts toward an average temperature. That drift is why you cannot fully control a gas grill with the dials alone; you control it with the burner pattern plus the lid.
Setting up direct and indirect zones
Direct heat means food sits directly over an active burner. It is for fast cooking: searing steaks, grilling burgers, cooking thin cuts and vegetables that need char. Indirect heat means the burners under the food are off, with heat coming from the surrounding lit burners. It is for anything that needs longer, gentler cooking: thick roasts, whole chickens, ribs and foods that would burn before cooking through over direct heat.
Most cooks need both zones in the same cook — sear the steak over the hot zone, then finish it over the cool zone, or brown a roast first and let it cook through with the lid down.
Two- and three-zone patterns
The pattern you set depends on how many burners your grill has:
- Two burners: light one burner on high and leave the other off. Food over the lit burner sears; food over the unlit burner finishes gently.
- Three burners: light the two outside burners and leave the middle off, or light one side and leave the rest off. The unlit middle creates a buffer zone that holds heat evenly for indirect cooks.
- Four or more burners: light the outside burners (or one full side) and leave the center or opposite side unlit. With multiple burners you can also create a gradient — high on one end, medium in the middle, off on the other — for cooking different foods at once.
Whatever the count, the goal is the same: a hot side you can sear on, a cool side you can move food to, and enough unlit space that flare-ups have nowhere to live.
Lid, thermometer and ambient heat
The lid is the second control. With the lid open, you are cooking with direct radiant heat from below and losing most of the ambient heat; with the lid closed, the chamber traps heat and the food cooks from all sides. For indirect cooking, the lid needs to stay closed — every time you lift it, the temperature drops and the cook extends. If you need to check food, lift the lid briefly and close it again instead of leaving it open while you work.
The lid thermometer reads the air near the lid, which is usually hotter than the air at grate level and often different from the surface temperature under the food. Treat it as a trend indicator, not a precision tool: it tells you whether the chamber is holding steady or dropping, while an instant-read thermometer tells you what the food is actually doing. If your grill has no built-in thermometer, a probe at grate level is a worthwhile addition for low-and-slow cooks.
Choosing zones by food

When a recipe says "medium heat" or "high heat," match it to a zone rather than a number on a dial: sear over the fully lit zone, cook gently over the unlit zone, and use the burner dials in between only when you want a middle temperature across the whole grate.
Dial settings and how to use them
Burner dials control gas flow, and gas flow controls how much heat the burner produces — but the relationship is not linear, and the dial numbers are not temperatures. A dial on high with the lid open produces a different cooking surface than the same dial with the lid closed. Learn your grill's behavior in three quick sessions: preheat with all burners high and the lid closed, note the lid thermometer after ten minutes, then repeat with burners on medium and on low. Those three reference points tell you which dial position gives you a searing zone, a medium zone and a gentle zone on your particular grill, and they are worth more than any generic chart.
For most grills, the useful pattern is to set the zone with the dial rather than to fiddle constantly: turn the burner under the food to the position that matches the zone you want, then leave it alone and use the lid to manage the ambient heat. Constant dial-twiddling produces temperature swings; a steady setting with the lid closed produces even cooking.
Managing low-temperature cooks on gas
Low-and-slow cooking on a gas grill is possible but different from a dedicated smoker, because gas burners do not idle down as low as a smoker's fire. The reliable method is indirect and small: light one burner or one end on its lowest setting, place the food on the unlit side, and use the lid to hold the ambient heat. Watch the lid thermometer and adjust in small steps — if the chamber runs high, crack the lid slightly or turn the lit burner down; if it runs low, add a second burner at its lowest setting rather than cranking the first one.
Expect some temperature drift and plan around it. A gas grill holding 250–350°F ambient with occasional swings can still produce excellent ribs and roasts, because the food cooks from the heat of the chamber, not from a precise number. What matters is keeping the food off direct heat and resisting the urge to open the lid. If you want true low-temperature precision for long cooks, a dedicated smoker or a pellet grill is the better tool; the gas grill handles it acceptably for a few hours.
Checking temperature with probes
Zone management gets you most of the way, but the food's internal temperature is the final authority. Use an instant-read thermometer for anything cooked to a specific doneness, and consider a leave-in probe for long indirect cooks so you can monitor the chamber and the food without opening the lid. Place the probe in the thickest part of the meat, away from bone and fat, and trust the reading over the recipe's time estimate — gas grills vary too much for times alone. When the food approaches its target, move it to the coolest zone if it needs to hold while the rest of the cook finishes.
Fixing hot spots and cold zones
Every gas grill has hot and cool areas, and they change as burners age. Find yours with a simple test: preheat the grill, lay a slice of white bread across each zone, and watch the toast pattern — darker bread marks the hot spots. Then cook accordingly, rotating food between zones instead of fighting the grill. If a burner clearly produces a dead zone even on high, clean the ports; if that does not fix it, the burner or regulator may need attention.
Temperature control also depends on the grill being reasonably clean. Grease buildup in the trays changes how heat reflects and can create flare-up zones that no dial setting can tame.
